To kick off summer, the Santa Barbara Independent partners up with eateries all over Santa Barbara County to bring you 7 days of $7 burgers. Vegans, meat lovers, and everyone in between can find something delicious and up their alley. This year we will be participating in Burger Week and for our special burger we are offering The Cuyama Smash Burger for $7 from June 27th–July 3rd.

Cuyama Smash Burger
smashed ground beef, Santa Barbara Cheese Company’s Cuyama Cheese (cheddar jack), shredded lettuce, pickled jalapeno, chipotle mayo
“The “Smash” part of the name is two-fold. First in the way the burger is prepared. The meat is made into a ball and then smashed into a patty on the flat top to sear the meat and create a beautiful texture. Second, during my research of Cuyama, to help truly develop a new cuisine (Cuyama Cuisine) that is unique to this valley, I learned that Native Americans (Chumash) inhabited the valley long ago and that in Cuyama’s recent history the agricultural, farming, cowboy lifestyle took over the valley. With the large focus on agriculture and the opportunity for jobs in agriculture, came a large Mexican-American occupancy and influence on the valley. This smash burger combines the hamburger style of the rural cowboys, with authentic Mexican/Mexican-American ingredients including, jalapeños and chipotle mayo. I also wanted to include a locally made ingredient, which is the Santa Barbara Cheese Company cheddar jack cheese, called “Cuyama,” which was made right here in this hidden gem of a valley. This smashing of the cultures is the start of developing a cuisine that is special and unique to this spot and this spot only.” -- Chef Victor Totoris
